Chuck Wagon Beans
Chuck Wagon Beans Recipe
1/2 lb bacon slices
3 lbs ground beef
1 lg onion, finely chopped
1 cup celery, chopped
2/3 cup beef broth
1-1/2 cloves garlic, minced
1-1/2 cups catsup
3 tbsp prepared mustard
1/2 tsp pepper
2 cans Bush's Baked Beans (13 oz)
In large pan, fry bacon until crisp, remove and drain. Pour away drippings. In same pan, add and stir ground beef, onion, and celery. When beef is brown and onion is tender, stir in broth and remaining ingredients. Cover and bake one hour, or in crock pot until hot and bubbly. Crumble bacon, sprinkle over beans.
Makes 12 servings, 1 cup each.

Hot Spiced Cider
Hot Spiced Cider
8 cups apple cider or apple juice
1/4-1/2 cup brown sugar
6 inches stick cinnamon
1 tsp whole allspice
1 tsp whole cloves
8 thin orange wedges or slices (optional)
8 whole cloves (optional)
In a large saucepan combine apple cider and brown sugar. For a spice bag, place
cinnamon, allspice, and 1 tsp whole cloves in a double thickness of cheesecloth.
Bring up corners of cheesecloth and tie with string. add spice bag to cider
mixture.
Bring to boiling; reduce heat. Cover and simmer at least 10 minutes. Meanwhile,
stud orange wedges with whole cloves. Remove and discard the spice bag. Serve
the cider in mugs with a studded orange wedge in each. Makes 8 (1 cup) servings.
Note from Lena-- Use the crock pot and don't bother with the boiling. Set it all
up and let it simmer on Low at least 4 hours. No peeking! Serve it up with the
orange wedges.

Crockpot Sausage n Grits Meatloaf
Slow Cooker Sausage 'n' Grits Meatloaf

"This meatloaf
has the southern taste of grits and sausage, and is made in a slow
cooker. There are no bread crumbs; egg whites and grits have the holding
power."
Ingredients:
2 16-inch square sheets of heavy duty
aluminum foil
1 pound ground beef
1/2 pound bulk pork sausage
1/3 cup liquid egg whites
1/3 cup dry grits

1 tablespoon onion powder
1 tablespoon garlic powder
1/2 cup ketchup
2 dashes liquid smoke flavoring, or to
taste (optional)

Directions:
| 1. | Fold each sheet of aluminum foil in half lengthwise, then fold in half lengthwise again, to make 2 strips of foil 4 inches wide by 16 inches long. Place the strips into the bottom of a slow cooker in a cross, so that the long ends of the strips come partway up the inside of the cooker (to make lifting handles). Spray the inside of the slow cooker and the foil strips with cooking spray. |
| 2. | Mix together the ground beef, pork sausage, egg whites, grits, onion powder, garlic powder, ketchup, and liquid smoke flavoring until thoroughly combined, and form into a rounded loaf. Gently place the loaf into the slow cooker on top of the crossed foil strips. |
| 3. | Cover the cooker, set on Low, and cook for 5 to 6 hours. To serve, carefully hold the ends of the foil strips, and gently lift the meat loaf from the cooker by the foil handles to place on a serving platter for slicing. |

Thanksgiving Leftovers 2-- Turkey Carcass Soup
Thanksgiving Leftovers are never a problem with the Dinner Diva (http://www.savingdinner.com/) on the case!
If you don't take care of the bones in short order after the turkey is history, open the trashcan and give them a proper burial. They have been good to you and your family and have fed you well. I freeze the carcass as soon as I've picked off the last of the meat to avoid the "should I use it or dump it?" quandary.
To make delicious Roast Turkey Carcass Soup beyond your wildest dreams, follow these simple directions.
First, pull the carcass apart, throw it in a roaster and fling some quartered onions, carrots and celery in there, and about 8 whole cloves of garlic. Drizzled this mess with some olive oil and toss it in the oven at 425 for about 45 minutes. Pull the roaster from the oven and let cool for about 10 minutes. Then put the roaster on the stovetop, add cold water (about 3/4 of the way up in the pan) and boil the whole thing right there (uncovered) for another hour (obviously we're talking about METAL pans here!!). Strain it, put in the fridge overnight, take off the top layer of grease and now this incredibly wonderful broth is ready for some action.
Note from Lena— I break the carcass a little until it fits in my large crock pot and let it do the work. Adding the onions, garlic, carrots, and celery are just part of good broth making, IMHO.
Roast Turkey Carcass Soup
Serves many
2 tablespoons olive oil
2 large onions, chopped
4 carrots, chopped
3 celery stalks, chopped
Salt and pepper to taste
Roast Turkey Carcass broth (see above directions to make)
1/2 to 1 teaspoon of thyme (depending on taste and quantity of soup)
1 bag (10.5 oz.) extra wide egg noodles
In a soup pot, heat the olive oil till hot over medium high heat. Add the onions and cook 5 minutes till soft and translucent. Add the carrots and celery and cook another five minutes stirring occasionally. Salt and pepper well to taste.
Now add the Roast Turkey Carcass broth you just made. Bring everything to a rolling boil; don't cover the soup. Add the thyme and the egg noodles and serve when the noodles are al dente.

Makes 8-10 servings
Prep. Time: 5 minutes
Cooking Time: 3 hours
Ideal slow-cooker size: 4- to 5-qt.
2-crust refrigerated pie dough pkg.
2 22-oz. cans apple pie filling
1 tsp. cinnamon
12 caramel candies
1. Press one crust into half the bottom of a cold slow cooker, and an inch or so up half its interior side. Overlap by ¼ inch the second crust with the first crust in center of slow cooker bottom. Press remainder of second crust an inch or so up the remaining side of the cooker. Press seams flat where two crusts meet.
2. Cover. Cook on High 1½ hours.
3. In a bowl, mix together pie filling, cinnamon, and caramels.
4. Pour mixture into hot crust.
5. Cover. Cook on High an additional 1½ hours.

Recipe: Spicy Cheese Soup
Well, ol' Lena needs to get ready for the menfolks to come home. Starting about 4:30 PM, they stumble in the door, pitifully hungry. I think I'll treat them with some cheese biscuits to go with their Spicy Cheese Soup
Spicy Cheese Soup
1 lb processed cheese, cubed (like Velveeta)
1 lb ground beef, cooked and drained
1 can (8-3/4 oz) whole kernel corn, undrained
1 can (4-oz) green chiles, chopped
1 can (14 oz) diced tomatoes with green chiles
1 can (14 oz) stewed tomatoes
1 envelope taco seasoning
Corn chips for garnish, optional
Combine all ingredients in slow cooker, and cook on Low 4-5 hours. Serve with corn chips if desired.
